St. Bruno Bread Co provides the Baton Rouge region with fresh, high- quality artisan bread made daily with a base mixture of flour, water, and salt. St. Bruno offers a consistent wholesale delivery network in order to make the bread easily accessible for the Baton Rouge residents via grocery stores, restaurants, markets, and specialty shops.
St. Bruno Bread Co's mission is to raise the standard of daily bread and to elevate the experience of eating everyday foods by utilizing time and technique (not preservatives) to achieve the best possible taste and texture of the baked goods. St Bruno's company slogan is :"The Capital's Geaux-To For Better Bread!"
Steven initially learned from Chef Gary Darling of Taste Buds in Covington, LA in 2013. In 2014, he attended the San Francisco Baking Institute in San Bruno, CA where he learned from Miyuki Togi and Mac McConnell. The Institute referred Steven to Bellegarde Bakery (New Orleans) while at school and once back home he began delivering breads for them. Steven learned about fermentation and bread chemistry from head baker Brett Guadagnino. Eventually, Steven worked his way up to head baker himself by 2015. Steven parted ways with Bellegarde in 2017 and eventually opened St. Bruno Bread Company in 2019 in New Orleans, LA where he mostly did pizza pop-up's until the COVID crash hit in March of 2020. Steven made the decision to go all in and pursue opening a commercial bread bakery in Baton Rouge, LA in late 2021.
